The Moka Pot
It uses steam pressure. As the water in the bottom boils, the steam pushes the hot water up through the coffee and into the top chamber. It’s fast and intense.

Aim for fine-to-medium. It should feel like table salt.
Step-By-Step Instructions:

Boil First: This is the secret! Fill the bottom part with already-boiling water up to the little gold safety valve. (Starting with cold water "cooks" the coffee beans on the stove while the water heats up, making it taste burnt).

Fill the Basket: Put your ground coffee in the metal basket. Level it off with your finger so it’s flat, but do not press it down. If it's too packed, the steam can't get through.

Assemble: Drop the basket into the base. Use your kitchen towel to hold the hot base while you screw the top on tightly.

Heat: Put it on the stove on medium heat. Keep the lid open.

Watch the Flow: After a minute or two, coffee will start to ooze into the top. It should look like flowing honey.

The Finish: As soon as the coffee turns pale yellow and starts to sputter/gurgle, take it off the heat immediately. Run the bottom of the pot under cold tap water—this stops the brewing so you only get the sweet flavours, not the bitter ones.
